BEER BREAD PIZZA WITH WHIPPED FETA, TOMATOES, GREEN OLIVES AND OREGANO

A tasty beer bread pizza inspired by Greek flavors. Makes two pizzas. Serves 2-4 people.

Ingredients
For the crust:
  • 500 - 550 g / 3¾ - 4 cups of flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 330 ml beer at room temperature
  • 1 tbsp olive oil
For whipped feta:
  • 150 g Greek feta cheese
  • 3 tbsp creme fraiche or sour cream
  • 2-3 tsp lemon juice
For the toppings:
  • 10-15 small dulcita tomatoes eller a similar type
  • 20 green olives
  • 1 red onion
  • 2-3 handfulls fresh oregano
  • Salt
  • Pepper
  • Olive oil
Instructions
For the crust:
  1. Set the oven to 250 degrees C / 480 degrees F. Leave a baking tray in the oven while it's heating up.
  2. Place flour, sugar, baking powder and salt in a mixing bowl. Mix well.
  3. Add a room tempered beer and olive oil and mix well. If the dough is sticky, add some more flour.
  4. Mix well and knead the dough until it's smooth.
  5. Devide the dough into two identical parts and set aside.
For whipped feta:
  1. Break a block of feta in smaller parts and place in a food processor (or a mixing bowl if you're using a hand mixer)
  2. Add creme fraiche or sour cream and lemon juice and blend until creamy.
Putting it together:
  1. Place each of the dough balls of a flat surface covered with flour. Shape each ball to circles and knead with your hands. Use a rolling pin to roll out each dough ball to a round, thin pizza crust.
  2. Transfer each pizza crust to a baking sheet and brush with olive oil.
  3. Place an equal amount of whipped feta in the middle of each pizza crust and spread out in circles motions with a spoon. Leave about 2 cm bare.
  4. Cut each small tomato in 3-4 pieces and device evenly amongst the two pizza crusts.
  5. Cut the olives in the size you want and spread on each pizza crust.
  6. Devide the red onions into thin slices and add to the pizzas.
  7. Transfer one of the pizzas (with the its baking paper) to the baking tray that's already in the oven.
  8. Bake in the middle of the oven for 10-15 minutes, until golden in color. Bake one pizza at a time.
  9. When the pizza is done, sprinkle over some salt and pepper.
  10. Coarsly chop fresh oregano and spread amongst the pizzas.
  11. Serve right away,
